Sounds too good to be true? Weeeell it isn't. If you want to learn more about the LCHF (Low Carb High Fat) lifestyle you can check out this blog written by Andreas Eenfeldt a Swedish Doctor who among others promote the LCHF way of eating.
Other than that there is nothing I want to say to try to convince anyone to test this way of eating out, YET. I am going to try living on a strictly Low Carb High Fat diet for the next three months or so, and see how it makes me feel. What I want to achieve is;
I want to lose weight and gain energy, something this way of eating is supposed to help you do. I'll be posting our LCHF recipes here on the blog

Today we made pizza for dinner. I can almost hear all of you thinking pizza?! But pizza is full of carbs? And yes, traditional pizza is, but the ones we tried out today were really yummy, and had just the good kinds of carbs from vegetables and almond. Since this was our first time having LCHF pizza I decided to try two different recipes, I tried one based on eggplant, and one based on cauliflower, and found the eggplant one to be best!
Here is the Recipe!!
This makes one tiny little pizza, for me once slice was enough, but I suggest making a salad on the side, or just doubling the recipe if you are really hungry!
The Perfect Primal Pizza Crust (developed by the lady that writes this blog)
1 lb shredded fresh eggplant (if your eggplant is very moist, then try squeezing some of the moisture out of it after shredding, and make sure it is one pound AFTER doing so)
½ cup (60 grams) shredded parmesan cheese
½ cup almond flour (we ground our own almonds, scold them in hot water, take the "skin" off and grind)
1 egg white
oil or butter(to grease the parchment and baking sheet)
Herbs or Garlic * Optional, we put them in, and loved the flavour.
your favorite pizza toppings, we used mushrooms, onion, cheese and bacon, as that was what we had in the fridge at the time.
1. Mix all ingredients thoroughly in a large bowl.
2. Transfer mixture to a baking sheet lined with a large sheet of greased parchment paper.
3. Use your hands to pat and form the ‘dough’ until it is a little less than 1 cm (1/4 of an inch) thick and your desired shape. In our case round.

4. Bake crust at 250C for 15 minutes.
5. As you hold the parchment, flip the pizza crust over onto the greased or non-stick baking sheet. Discard the parchment and return the crust to the oven for 5-10 more minutes.
6. Remove the crust from the oven and allow to cool for 10 minutes.
7. Top the crust with your favorite toppings and bake at 230C for 10 minutes or until toppings are melted and or heated to your taste.
---------------
We found that this pizza crust was definitely the best pizza crust out of the two that we tried. It had a great, "non-intrusive" flavour, and was nice and crispy.
Try this recipe out if you want to try LCHF ,if you just feel like eating a meal without flour or gluten, or if you just want to try something new!
Blog to you soon!

Hei Maria.
ReplyDeletetakk maria!! Husker jo godt at du spiste sånn mat i york ja:D vi får se hvordan det blir det her!
